The story

Flint scrapers to steel: a short history of skinning knives

Removing hides is one of the oldest jobs people have given to a blade. Prehistoric hunters used flint scrapers and flakes for it, and later cutlers developed the broad, curved skinning knife, whose deep belly lifts the hide in long sweeping strokes rather than poking through it. The gut hook on the spine is a later refinement, added so the first opening cut could be made without a second tool.
