Sharpening

A yearly stone session for the six knives

This case holds no honing steel, so give the six knives a short session on a whetstone once or twice a year; the forks need nothing but washing.

  1. Wet a combination stone (around 1000 grit on one face, 3000 or finer on the other) and set it on a damp towel so it cannot slide.
  2. Hold each 11.5 cm blade at about 20 degrees and sweep it across the coarse face from heel to tip, five or six strokes per side.
  3. Repeat on the fine face with lighter pressure, then strop on leather or folded newspaper to remove the burr.
  4. Rinse and wipe the blades, and dry the acacia before anything goes back in the case.
