How to use

Laying a formal table for six

  1. Place the plates first, centred in front of each chair, a short distance from the table edge.
  2. Set each knife to the right of its plate, edge turned towards it, with the end of the 12 cm handle in line with the bottom of the plate.
  3. Put the forks to the left; if there are several courses, the cutlery used first goes on the outside.
  4. Glasses sit above the knife, and the napkin goes on the plate or to the left of the forks.
  5. After dinner, collect the knives separately so the horn never sits in soapy water with the dishes.

The story

When horn let the light through

Pale horn has a quality that black horn lacks: shave it thin enough and light passes through. For centuries, sheets of horn were set into lanterns in place of glass, a link remembered in the old English spelling 'lanthorn'. Horn was also used for the hornbooks children learned their letters from, a thin transparent layer protecting the printed alphabet beneath.

On a knife handle, that same translucency gives white horn its soft, layered glow, quite different from the flat white of plastic.
