Sharpening

Putting an edge on the blade, never the corkscrew

  1. Fold the corkscrew away and open only the 10.5 cm blade, so the worm cannot catch your fingers on the stone.
  2. Wrap the creamy handle in a cloth or wear a thin glove: stone slurry and metal dust grey a pale handle quickly.
  3. On a combination whetstone, around 1000 grit and then 3000, hold the blade at roughly 20 degrees and sweep from heel to tip, matching the strokes on both sides.
  4. Remove the burr with a few light passes on leather or folded newspaper.
  5. Wipe the blade and the inox bolster clean before folding.
