Sharpening

Whetstone, then strop: a two-stage routine

A serpette knife with a 7.5 cm blade needs little metal removed if it is kept up regularly. Two stages cover it:

  1. On a medium whetstone of around 600 to 1000 grit, work the inner curve with the stone's edge at about 20 to 25 degrees, using short strokes from heel to point.
  2. Count your strokes and give each face the same number, so the edge stays centred.
  3. Move to a fine stone, 3000 grit or so, for a few lighter passes.
  4. Wrap a strip of leather loaded with polishing compound around a dowel and strop the curve with the edge trailing.
  5. Between sharpenings, a few strop strokes after each session revive the edge.
