How to use

Opening and closing a compact folder safely

At 11 cm closed, this olive wood knife disappears into a pocket, and a careful routine keeps it pleasant to use.

  1. Hold the closed knife in one hand, slot facing upwards and the inox bolster towards your fingertips.
  2. Pinch the blade near its tip between thumb and forefinger of the other hand and swing it out until it stops.

Keeping a 9 cm edge keen on a whetstone

  1. Start on a medium stone, around 1000 grit, soaked or oiled according to its type.
  2. Colour the edge bevel with a marker, then rest the blade at roughly 20 degrees to the stone.
  3. Sweep from the heel by the inox bolster to the tip in light, even strokes, the same number on each side; the marker shows at once whether you are reaching the very edge.
  4. Feel for a slight burr along the opposite face, then refine on a finer stone and finish with a few passes on leather.
  5. Wipe off the steel dust and keep water away from the olive wood before folding.
