Sharpening right to the heel without a bolster
With no bolster in the way, every part of this 8.5 cm edge can reach the stone, which makes a small Pakistan folding knife like this one easy to keep keen.
- Colour the bevel with a marker so you can see exactly where the stone is cutting.
- On a 1000 grit stone, hold roughly 20 degrees and push the blade edge-first from heel to tip, letting the stone touch the very base of the edge.
- Check the marker: if it has gone right down to the edge, your angle is right.
- Repeat on the other side, then finish on a fine stone or a leather strop.
- Rinse, dry and keep the olive wood out of the water.
