How to use

Your first dozen: shucking safely from fridge to plate

If you have never opened an oyster, this teak-handled oyster knife is a forgiving place to start, as the inox bolster stops your hand sliding onto the blade.

  1. Check each oyster first: the shells should be closed, or close when tapped. Discard any that stay open.
  2. Rinse the shells, then hold one deep side down in a thick cloth on a board.
  3. Push the tip of the 6 cm blade into the hinge and rotate the teak handle a quarter turn until the top shell releases.
  4. Run the blade under the top shell, then under the meat, keeping the oyster level so none of the juice spills.
  5. Set each one on crushed ice and serve promptly.
