Pro tip

Colour the edge before you sharpen

Run a permanent marker along the bevel of the blade before drawing it through the carbide notch. After three light strokes, look at the edge: where the ink has gone, the knife sharpener is working; where it remains, the blade angle or pressure needs adjusting. It is the quickest way to learn a new sharpener, and it saves metal.
