Sharpening a hammered blade without flattening its texture
- Work only on the edge bevel: the dimpled faces of the 10.5 cm blade are a finish, not a surface to grind.
- Lay the blade on a 1000 grit stone at about 20 degrees, so the hammered face stays clear of the stone.
- Sweep from heel to tip with light pressure, alternating sides until a fine burr forms, then refine on a 3000 grit stone.
- Remove the burr on leather, and brush stone dust out of the dimples with a soft toothbrush.
