How to use

Serving a cheese board with table knives

Table knives make good cheese and butter knives for a relaxed board, and a set of six gives one per cheese:

  1. Take the cheeses out of the fridge about an hour before serving so their flavours open up.
  2. Set one knife beside each cheese, so strong and mild flavours never share a blade.
  3. Cut soft cheeses with a single clean stroke, wiping the 11.5 cm blade between slices.
  4. Spread butter or soft cheese with the flat of the blade rather than the edge.
  5. Afterwards, wipe the knives and wash them by hand, keeping the bone handles out of the water.

Care & maintenance

Dry, cool and out of the bowl: bone care

Bone is porous and slightly brittle, so it asks for gentle habits:

  • Dip only the blade end in the washing-up water where possible, and wipe the 12 cm handle with a damp cloth instead.
  • Dry each knife straight after washing; never leave it to drip on a rack.
  • Keep the set away from heat sources, which can dry bone until fine cracks appear.
  • A light rub with mineral oil once or twice a year stops the surface looking chalky.
  • Each stainless Pakistan knife goes back into its wooden case, not into a drawer with heavier utensils.
Sharpening

Sharpening on a water stone without wetting the bone

With no steel in this case, a combination whetstone is the simplest tool, but water and bone do not mix:

  1. Wet the stone, then set it on a towel near the edge of the counter so the handle hangs over a dry area.
  2. On the coarse side, around 1000 grit, hold the blade at about 20 degrees and work the 11.5 cm edge until you feel a slight burr along the opposite side.
  3. Repeat on the second side, then refine both on the fine face with lighter strokes.
  4. Wipe the grey slurry off the blade with a cloth before it can run onto the handle, then dry the bone at once.
