Chitin links mushrooms, crabs and beetles
The cell walls of fungi are made largely of chitin, the same tough material that forms beetle shells and crab exoskeletons. It helps explain why some mushroom stems are fibrous enough to make a smooth blade slip, and why a Pakistan folding knife with a partly serrated edge, like this dark acacia model, cuts them more cleanly.
