Making clean slicing cuts with a 10.5 cm blade

A longer folding blade slices rather than chops, and a little technique gets the most from it.

  1. Open the knife with two hands and check the blade has settled at full extension.
  2. Wrap your fingers round the acacia, with the thumb resting along the side of the handle just behind the inox bolster.
  3. Start each cut near the heel and draw the blade back through the food or cord in one long stroke, using its full length.
  4. Cut food on a board, never in your palm.
  5. Wipe, dry and fold the blade, keeping your fingers off the slot as it closes.
